Ingredients & substitution suggestions
Here’s what you’ll need to make this recipe:
- Whiskey – I used Jameson Irish whiskey, feel free to use your favorite brand. A lot of my readers used different liquors and loved it. Check “Readers’ Tips and Suggestions” down below for some ideas.
- Heavy cream – or half & half. Half cup of whole milk and half cup of heavy whipping cream will work as well. Don’t use only milk or your drink won’t be creamy enough.
- Sweetened condensed milk
- Chocolate syrup – or chocolate topping (I used Hershey’s).
- Pure vanilla extract – or another extract, like almond , peppermint, and orange. What about some cinnamon or pumpkin spices? :)
- Instant coffee granules – to kick up the coffee flavor, choose an instant espresso.
How to make Baileys at home
This homemade Baileys Irish cream recipe comes together in under one minute in the blender.
Simply combine cream or half-and-half, sweetened condensed milk, instant coffee, chocolate syrup, vanilla, and mix on low speed for 30 seconds. Then add the Irish whiskey and blend for a few more seconds. Done!
TIP → Powerful blenders can curdle the mixture as they whip the cream. To avoid this, use a low speed and mix just until combined. If your mixture does appear curdled, simply strain the liquid through a sieve and scrape any excess off the top with a spoon.
Recipe variations
The ratios of the ingredients can be tweaked according to your preferences.
Do you want more or less chocolate? Go for it. Do you want it stronger? Add more whiskey. Not a fan of coffee? Replace it with raspberry liqueur or salted caramel. It’s entirely up to you.
Every Christmas, I make a big batch and give it to friends and family. I put it in pretty glass bottles with a ribbon and a handwritten card with suggestions on how to use it and instructions (example: keep it refrigerated, “enjoy by..”)
Storage
The recipe makes about 1 liter (4 cups). You can either pour it into 1 large bottle or divide it into smaller bottles. Store it in the refrigerator for up to 2 months.
Bottles
I bought the bottles in the pictures from “Lakeland“, a shop in the UK. They have an online store but the 250 ml bottles have been out of stock for a while.
You can find swing top bottles in stores like Target, discount stores, or you can order them on Amazon and Etsy.
Readers’ tips and suggestions
You don’t have time to read all the comments? Here is a summary:
- Mark tried this recipe with Southern Comfort and Amaretto. Brenda with brandy, and it was awesome! Carol with Bourbon.
- Melanie‘s tip: if you don’t have chocolate syrup, use 1/2 teaspoon of cocoa powder instead. I suggest whisking the cocoa powder with a tablespoon of cream until smooth.
- Jo replaced the coffee and chocolate syrup with Kahlua.
- Claudia bought beautiful Bormioli Rocco bottles on Amazon. Just search for “glass bottles for liquor”, there are so many options!
- Lorry used “Screwball whiskey” (peanut butter whiskey 😱) + 1 extra tablespoon of chocolate syrup and omitted the coffee.
- I love Kathy‘s suggestion: make a cinnamon Baileys with “Fireball Whiskey” – very Christmasy!
- Rebecca added orange extract and extra chocolate. Amazing!
- Chris made a pumpkin spice version adding half a teaspoon of pumpkin spice, and a half cup of pumpkin puree (not pumpkin pie filling).
- Wade made a dairy- free version. He used coconut milk to make sweetened condensed milk, and then used coconut milk instead of cream.
- Arvind used Drambui instead of coffee and added some Cointreau and a spot more chocolate sauce.

- 1 can (14 oz.-395 ml) sweetened condensed milk
- 3 tablespoons chocolate syrup
- 1 teaspoon instant coffee granules
- 1 teaspoon pure vanilla extract
- 1⅔ cup (400 ml) Irish whiskey I used Jameson
Instructions
- Place the cream, sweetened condensed milk, instant coffee granules, chocolate syrup, vanilla, and mix on low speed for 30 seconds.
- Then add the whiskey with the blender going, at a very slow speed, and give it a whirl for a few more seconds.
- Transfer the Baileys Irish cream into sterilized glass bottles with tight-fitting lids and store in the refrigerator for up to 2 months.
- Shake well before use.
- Enjoy!
Notes
- Curdle – High speed will whip/curdle the mixture. We’re aiming at just combining the ingredients – use the blender at low speed.
If it curdles, strain the liquid through a sieve, then scrape any excess off the top with a spoon. - Nutrition Facts: 1 serving = 1 glass / 37 ml.
I used unsweetened coco instead of Hershey syrup. This is fab can’t wait to share with my friends!
This is really good, thanks for sharing, I hate when people change a recipe without trying it first, which I did, but, instead of chocolate, I had some chocolate tequila from Mexico so used that. Omg delicious. I make a batch for gifts at Christmas and a batch for my kids to take camping, it is always a hit ! Make sure you use Jamison Irish whiskey, I also think it is the best choice.
I made a double batch using Jameson Irish whiskey and fat free half & half. It’s absolutely delicious. I’ve been making homemade vanilla extract used the batch that I made with Jameson. Great recipe! Thank you for sharing. Cheers!
Thank you for the feedback, Susan!
I’m looking to make this for Christmas gifts. Do you think you could just whisk it to blend, so you don’t curdle anything? TIA ❤️
Yes, you can use a whisk. :)
Yum!!!! Made this with 1/4c Kahlua instead of chocolate syrup and and coffee, and I used 3/4c bourbon in place of the full amount of Irish whiskey. Also I used half and half. I made this to drink in coffee and other cocktails but I could drink it all by itself.
Your version sounds delicious, Hannah! Thank you for sharing :)
Simply loved making this recipe last years (end of Covid 2021) Christmas/lights festival dinner…. Family all want to have it again… It’s now a family tradition thank you so much, well worth making, blessings from Melbourne Australia
Thank you for the feedback, Sharon! I am happy your family loved it! :)
Delicious!! Though Irish whiskey wasn’t available, Canadian Whiskey made a great substitute! Planning on adding some raspberry liquor next batch as mentioned above, or perhaps a dab of peanut butter?! (Chocolate and peanut butter lover)
I would go with peanut butter
Was so Easy to make & it was “Yummy” I used a Handheld Blender to mix & it was Just powerful enough, but not too powerful. And the Clean up was easier then using a blender. Going to make this for Gifts! TY…
Very, very good. The cost of these ingredients I can make 2 bottles for the cost of one bottle of Bailey’s. With NO sacrifice to flavor.
I made a double batch of this Baileys Irish cream recipe and it’s better than the store-bought that we’ve been buying and a heck of a lot cheaper than we was buying it went up five dollars a bottle at the liquor store well that ended that and now I can make more of it then what we were paying for at the liquor store at a better price thank you for this recipe I’m looking for more
Thank you for the feedback, Midge! :)
I don’t know who came up with this recipe, but since discovering it my family had been drinking gallons of this stuff.
I made this 3 ways today and they were all excellent!
1. No coffee, peppermint schnapps
2. 99 Bananas
3. No coffee, Fireball whiskey
Thanks for the recipe. Ive never used condensed milk before. Do I literally just throw the powder in or do I add liquid to it? Feels like this is going to be extremely thick if I do not! Sorry, possibly a silly question.
We bought a bottle of coffee rum on our honeymoon in Mauritius so desperate to find a way to use it! We don’t have an espresso machine and every other drink I’ve found seems to need one!
Hi Jack! Condensed milk is not the same as dry milk/milk powder. Condensed milk is regular cow’s milk that has been concentrated and sweetened with sugar.
Happy Holidays! :)
In addition to what Elena said, Sweetened Condensed Milk is not the same as Condensed Milk. You need to use Sweetened Condensed Milk. (And don’t use Sweetened Condensed Filler Milk.)
I didn’t have any instant coffee or instant espresso so I substituted a double shot of fresh espresso from a cafe. I let the espresso cool before adding it.
I absolutely love this recipe! Taking heed to those who mentioned they thought it had too much Jamison’s, I only used 3/4 cup. It still seemed like I could light my breath on fire, so next time I will cut the booze down even further. I used all half and half and was very pleased with the taste & consistency
