Homemade Baileys Irish Cream
This homemade Baileys Irish Cream is rich, creamy, and ready in under a minute. It’s perfect for DIY Christmas gifts, adding to coffee and desserts, or mixing into festive cocktails.

I love edible Christmas gifts, like Italian biscotti or flavored salts. There’s something special about giving something you’ve made yourself, and this homemade Irish cream recipe has become a reader favorite over the years.
It’s incredibly easy to prepare. Everything comes together in the blender, and once it’s ready, you can pour it into small glass bottles and decorate them with one of my free printable labels.
Of course, you can enjoy it yourself, too! Serve it chilled or over ice, add a splash to your coffee or hot chocolate, or pour it over vanilla ice cream. You can also use it in brownies, cakes, or holiday cocktails. And if you’re planning a festive gathering, my cranberry mojito and pomegranate Moscow mule are two more drinks to try.
Recipe Highlights
- Budget-friendly: Costs less than store-bought Baileys.
- Simple ingredients: Nothing complicated, and you know exactly what’s going into it.
- Make it your own: Adjust the coffee, chocolate, or whiskey to your taste.
- Easy to make ahead: Prepare it in advance and keep it refrigerated until you’re ready to serve or gift it.
Key Ingredients & Substitutions
- Whiskey: I use Jameson, but another good-quality Irish whiskey will do. Some readers have tried bourbon, brandy, and flavored spirits. See their suggestions below.
- Cream: Heavy cream creates a richer texture, while half-and-half makes a lighter version. Regular milk is too thin.
- Sweetened condensed milk: Adds sweetness and creaminess. Evaporated milk won’t give the same results.
- Chocolate syrup: Hershey’s is my favorite, but any brand works, including sugar-free.
- Instant coffee: Choose regular, espresso, or decaf granules, depending on how strong you like the coffee flavor. You can leave it out if you prefer. The taste will be slightly different, but the recipe will still work.
- Vanilla extract: Pure vanilla is my preference. You can also try almond, peppermint, or orange extract. For a holiday twist, add a little cinnamon or pumpkin spice.
See the recipe card below for a detailed ingredient list and step-by-step instructions.
How to Make Homemade Baileys
- Blend the base: Add the cream, condensed milk, instant coffee, chocolate syrup, and vanilla to a blender. Blend on low speed for about 30 seconds.
- Add the whiskey: Slowly pour in the whiskey while blending on low. Continue for a few seconds, just until combined.
- Taste and adjust: Taste the mixture and add a little more whiskey, chocolate, or vanilla if needed.
- Bottle and Chill: Pour into clean glass bottles with tight-fitting lids and refrigerate.
Elena’s Tip: Keep the blender on low speed. High speed can cause the cream to thicken or separate. If this happens, strain the mixture through a fine sieve and gently skim off any foam from the top.

Recipe Variations
Over the years, readers have shared some creative variations of this Irish cream recipe. Here are a few of their ideas.
Different spirits
- Southern Comfort and Amaretto: Mark combined the two.
- Brandy or bourbon: Brenda tried brandy, while Carol preferred bourbon.
- Kahlua: Jo replaced the coffee and chocolate syrup with Kahlua.
- Screwball whiskey: Lorry added an extra tablespoon of chocolate syrup and skipped the coffee.
- Fireball whiskey: Kathy made a cinnamon version.
- Drambuie and Cointreau: Arvind replaced the coffee with Drambuie, then added Cointreau and a little more chocolate syrup.
Other variations
- Cocoa powder: Melanie mixed ½ teaspoon with a little cream instead of chocolate syrup.
- Orange and chocolate: Rebecca added orange extract and extra chocolate.
- Pumpkin spice: Chris added ½ teaspoon of pumpkin spice and ½ cup of pumpkin purée (not pumpkin pie filling).
Dairy-free option
- Coconut milk: Wade made a dairy-free version using homemade sweetened condensed milk and coconut milk instead of cream.

How To Make It: Homemade Baileys Irish Cream
Ingredients
- 1 cup (240 ml) heavy cream or half & half
- 1 can (14 oz – 397 g) sweetened condensed milk
- 3 tablespoons chocolate syrup
- 1 teaspoon instant coffee granules
- 1 teaspoon pure vanilla extract
- 1⅔ cups (400 ml) Irish whiskey, I used Jameson
Equipment
- Glass bottles with tight-fitting lids
Instructions
Blend the base
- Add the cream, sweetened condensed milk, instant coffee, chocolate syrup, and vanilla to a blender. Blend on low speed for about 30 seconds.
Add the whiskey
- With the blender still running on low, slowly pour in the whiskey. Blend for a few more seconds, just until smooth.
Taste and adjust
- Taste and add more whiskey, chocolate syrup, or vanilla if desired.
Bottle and chill
- Pour the mixture into clean glass bottles with tight-fitting lids. Refrigerate for up to 2 months and shake before each use.
Notes
- Yield: Approximately 1 liter (4¼ cups). You can double or triple the recipe.
- Avoid separation: Blend on low speed and stop as soon as the ingredients are combined. If it curdles, straining may remove some lumps but won’t necessarily restore a smooth texture.
- Storage: Keep refrigerated in tightly sealed bottles for up to 2 months.
- Serving size: Approximately 37 ml.

I make this every year for my adult kids and they love it on Christmas morning before my grandkids wake up. Perfect for coffee or plain. The only change I made was using brandy instead of Jameson. It’s a gentler, smoother touch.
I love the idea of making it a Christmas morning tradition, MaryAnn! :)
I’ve made this about 10 times and get many compliments, every time. I follow the recipe, and am making a few batches for fun holiday gifts this year. Cheers!
So happy to hear that, Ingrid. Happy holidays!
Excellent! Had to use bourbon and pre-brewed espresso shot but still had great results.
That sounds delicious!Love how you made it work with what you had.:)
Where I live, there’s no such thing as Irish whiskey. I substituted Barceló Añejo rum. It’s quite delicious 😁
It does sound delicious, Diana! Can’t argue with that 😄
Excellent!
I just made this and it’s fantastic. I did not alter anything – followed your recipe to the ‘T’ and it is delicious!
I’m now thinking this would make a nice gift. (might have to make more)
Thanks so much. I’m glad I stumbled across your website.
Thank you for trying the recipe and for taking the time to leave such a kind comment, Patty. I’m so glad you enjoyed it. Yes, it makes a lovely gift for the holidays! You’ll also find a link in the post for the free printable labels I created. :)

So glad you enjoyed it, Joe! :)
Do you have the link for those Jars or the sizes to use?
The bottles in my photos are 250 ml (8 oz) but unfortunately they’ve been discontinued. You can find similar swing-top bottles on Amazon.
So easy, and so good! We like it better than Bailey’s. I’m able to make a lighter alcohol version for my elderly mother.
I made 23 of these for favors. Delicious!
Wow, Janet! 23 favors—that’s amazing!Thank you for sharing your feedback!
I’m going to make this today!! I’m making a big batch and am giving it as gifts to friends and family. I’m a bit perplexed about the expiry date. You mentioned that it would be good for months, when my half and half expires in two weeks. How does this work? Thank you kindly!! Can’t wait to try it later!
Thank you for your question, Sherry. The alcohol in the Irish cream acts as a preservative, which helps it last much longer than the expiry date of the half-and-half. That said, for the best quality and safety, I recommend storing it in the fridge and using it within 2 months. Be sure to shake the bottle before serving, as it may separate slightly over time.
I hope your friends and family will love it! Let me know how it turns out!
Made this recipe twice now. Absolutely delicious. Followed it exactly.
Love making my own . I use Black Velvet and half and half. I like this thicker than store bought but not as thick as heavy cream. You will save a lot in comparison to purchasing name brand. I’ve use Irish whiskey but prefer Black Velvet, smoother I believe. Give this recipe a try. I love it!
This is a quick and easy recipe. It’s my go to.
Made this last week. Absolutely delicious, and half the price of Baileys!
Glad you enjoyed it, Julie!
Bloody delicious. Mum and I used to make this years ago. I’m pretty sure it’s the same recipe. I only had espresso coffee and the taste was still lovely.
Glad you enjoyed it, Kath! :)
