Baked Cinnamon Sugar Donuts
You’re going to love these baked cinnamon sugar donuts. They are soft, fluffy and just bursting with warm, comforting flavors like cinnamon and nutmeg .
Baked donuts are quick and easy to whip up for breakfast in the morning. Add the dry to the wet ingredients, mix them together until just combined, and bake for about 10 minutes. Once the donuts are cool enough to be handled, brush with melted butter and dip into a cinnamon-sugar mixture.
The only special tool you need is a donut pan. Haven’t you got a donut pan yet? A muffin pan will work just fine!
To get the batter into the pan, I used a large ziplock bag. Spoon the batter into the bag, seal it, cut off one of the bottom corners and pipe the batter into the pan. Fill the cavities only about 3/4 full or the holes in the middle will close up while baking.
Donuts are best served fresh the same day, but you can keep them for up to 3 days in an airtight container or freeze them for up to 2 months. To defrost, thaw overnight in the refrigerator and warm up in the microwave.

Baked cinnamon sugar donuts. Moist, light and fluffy donuts baked in a donut pan and topped with a cinnamon-sugar mixture.
- 120 grams (1 cup) all-purpose flour
- 65 grams (1/4 cup+1 tablespoon) granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 100 ml (1/3 cup+1½ tablespoon) skim milk feel free to use full fat milk
- 30 grams ( 2 tablespoons) unsalted butter melted
- 1 egg
- 1 teaspoon vanilla extract
- For the cinnamon-sugar topping:
- 30 grams ( 2 tablespoons) unsalted butter melted
- 100 grams (1/2 cup) granulated sugar
- 1/2 teaspoon cinnamon

Preheat the oven to 175 degrees (350 degrees F). Spray a donut pan with nonstick cooking spray and set aside.

In a large bowl whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.

In a small bowl whisk together the milk, butter, egg and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir with a wooden spoon or a rubber spatula just until combined. Be careful not to overmix the batter.

Spoon the batter into the donut cavities or use a large ziplock bag. Cut a corner off the bottom of the bag and pipe the batter into each donut cavity, filling 3 ∕ 4 of the way full.

Place the pan in the oven and bake for 8 to 10 minutes.

Remove from the oven and allow to cool in the pan before inverting onto a wire rack to cool down until you can handle them.

Make the cinnamon-sugar topping. In a small bowl mix together the sugar and cinnamon.

Brush each donut with melted butter, then dip in the cinnamon sugar mixture until well coated.

I have not made this recipe yet but any previous attempt they have baked to the point the hole closes on the top as if the donut pan was to full but I barely had anything in it. Any tips to avoid it ruining this recipe or is it likely the recipe I was using?

Just made these for breakfast and they were delicious!! I don’t have a donut pan, so I actually made them in a muffin tin. I had to bake them longer, probably around 20 minutes, but they turned out perfectly! Super fluffy and just the right amount of sweetness. Definitely will be making again!

This was the second time making these and they do not disappoint! I absolutely love these and they were so simple to make ! My bake time however was a little longer, I think my oven is slightly off. Having said that I no longer stop at the donut case at the supermarket! Thanks for the great recipe.
