Balsamic Strawberries Chicken Salad

A flavorful, colorful and filling chicken salad loaded with baby spinach, juicy strawberries, candied pecans, thinly sliced red onions and crumbled feta cheese. It only takes 25 minutes to throw together!
Ingredients
- For the strawberries:
- 1 1/2 tablespoon extra-virgin olive oil
- 1 1/2 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon chopped fresh thyme
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 245 grams (1 1/2 cup) sliced strawberries
- For the maple pecans:
- 30 grams (1/3 cup) pecans
- 1 tablespoon maple syrup
- a generous pinch of cayenne pepper
- a pinch of salt
- For the chicken:
- 1/2 tablespoon olive oil
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 skinless, boneless chicken breast
- cooking spray
- Other ingredients:
- 120 grams (4 cups) fresh baby spinach
- 1/2 small red onion thinly sliced
- 28 grams (1/4 cup) reduced-fat crumbled feta cheese
Instructions

Strawberries:

In a medium bowl, whisk together the oil, balsamic vinegar, honey, thyme, pepper, and salt. Add the strawberries, toss to coat and set aside.

Pecans:

Toss the pecans with maple syrup, cayenne pepper, and salt. Spread the nuts on a lined baking sheet in a single layer and bake at 200 degrees C (400 degrees F) for 15 minutes or until toasted and golden brown. Remove from the oven and set aside to cool.

Chicken:

Heat a medium skillet over medium-high heat. Brush the chicken breast with olive oil, and sprinkle with salt, pepper, and paprika.

Coat the pan with cooking spray, add the chicken to the pan, and cook until no longer pink on the inside and nicely browned on the outside. Let it rest for 5 minutes then cut the chicken into slices.

Assemble the balsamic strawberries chicken salad:

Divide the baby spinach between 2 plates, top with the sliced chicken, strawberries, balsamic mixture, and onions, sprinkle with feta cheese and pecans and serve.
