This chopped Brussels sprout quinoa salad with walnut dressing is the perfect combination of flavors, textures and healthy ingredients.

Ingredients
For the chopped Brussels sprout quinoa salad:
  • 1 medium sweet potato cubed
  • 1 tablespoon olive oil
  • salt and pepper
  • 100 grams (1/2 cup) quinoa
  • 200 ml (1 1/4 cup) water
  • 350 grams (12 ounces) Brussels sprouts rinsed and ends trimmed
  • 150 grams (5.3 ounces) canned chickpeas drained and rinsed
  • 30 grams (1/4 cup) chopped walnuts
  • 30 grams (1/4 cup) dried cranberries
For the dressing:
  • 45 grams (3/8 cup) chopped walnuts
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 clove garlic minced
  • 3/4 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • To garnish (optional):
  • fresh thyme chopped
Instructions
  1. Pre-heat the oven to 200 degrees C (392 degrees F).
  2. In a large bowl, toss the cubed sweet potato with 1 tablespoon of olive oil, salt and pepper.
  3. Spread it out in a single even layer on a baking sheet covered with parchment paper. Bake for 20 minutes, or until the potato is tender.
  4. Rinse the quinoa and drain. In a small saucepan, combine the quinoa with water and bring to a boil uncovered.
  5. When it starts to boil, reduce the heat to the lowest setting, cover and simmer for 20 minutes or until the water is absorbed and the quinoa is light and fluffy.
  6. Thinly slice the Brussels sprouts. You can use a food processor with the blade attachment, a box grater, a mandoline or a sharp knife.
  7. Prepare the walnut dressing: put all the ingredients in a food processor and pulse until smooth.
  8. In a large mixing bowl, add the quinoa, Brussels sprouts, chickpeas, cranberries and walnuts. Pour the dressing, toss, garnish with chopped thyme and serve.
  9. Enjoy this delicious chopped Brussels sprout quinoa salad!
