Making cranberry sauce from scratch couldn’t be easier. All you have to do is bring the sugar and water to a boil, add the cranberries, and allow the mixture to return to a boil. Then add the orange juice and zest, a cinnamon stick , lemongrass, a pinch of salt, and simmer for 7 minutes. The sauce will look a little thin when it’s done but don’t worry, it will thicken to a perfect consistency as it cools.

Lemongrass is a citrus-scented herb and can be found in most grocery stores or Asian markets. Together with the cinnamon stick and orange juice and zest, it just gives a little extra depth that will make your family and friends ask what the secret ingredient is!

Cranberries are extremely tart, and need sugar to balance their tartness. I used a combination of granulated sugar and light brown sugar, but you can use only granulated sugar, only brown sugar, coconut sugar, honey, maple syrup, or a sugar substitute.

Make the homemade lemongrass cranberry sauce up to a week in advance, and store it in an airtight container in the fridge. I don’t recommend freezing it though, as it might be too watery when thawed.

Homemade Lemongrass Cranberry Sauce

Ingredients
  • 85 grams (⅓ cup + 1 tablespoon) granulated sugar
  • 90 grams (⅓ cup + 1 tablespoon) light brown sugar
  • 120 ml (½ cup) water
  • 340 grams (one 12-ounce package) fresh cranberries
  • the juice and grated zest of 1 orange
  • 1 cinnamon stick
  • 1 lemongrass stalk outer leaves removed
  • a pinch of salt
Instructions
  1. Place the cranberries in a colander and rinse them. Pick out and discard any damaged or bruised ones.
  2. In a large saucepan, set over high heat, and bring the sugar and water to a boil. Stir to dissolve the sugar.
  3. Once boiling, add the cranberries and bring the mixture to a boil again.
  4. When boiling point is reached, reduce the heat, add the orange juice, orange zest, cinnamon stick, lemongrass, and salt, and simmer for 5 to 7 minutes, or until the majority of the cranberries have burst.
  5. Remove from heat, and let it cool at room temperature.
  6. Remove the lemongrass and cinnamon stick. Transfer to a bowl, cover with plastic wrap and chill for at least 1 hour.
  7. The lemongrass cranberry sauce will continue to thicken as it cools.
