Crunchy Peanut Butter Quinoa Granola

Greek yogurt, fresh berries, and a big scoop of homemade granola is the best way to start the day.

The recipe is very simple, requiring only 7 ingredients and 5 minutes prep time. Start by melting the peanut butter and honey in the microwave for 15-30 seconds. Then toss everything together in one big bowl, spread onto a baking sheet lined with a silicon baking mat or parchment paper and pop it in the oven for about 20 minutes. Remove from the oven and let it cool completely before tossing in the chocolate chunks.

Quinoa adds extra crunch and nutrients, honey acts as a sweetener and glue, peanut butter and chocolate are perfect together! 🙂

To make this recipes vegan, replace the honey with maple syrup or agave. To make it gluten-free, be sure to use only certified gluten-free oats.

The thing I love most about homemade granola is that you can easily customize it based on what you currently have in your pantry. Do you have walnuts or pecans instead of almonds? Toss them in.  Cranberries, raisins or cherries instead of dark chocolate?  Add them too!

Store the granola in an airtight container for 2 weeks or freeze it for up to 1 month.

Ingredients
  • 135 grams old-fashioned rolled oats (1 1/2 cup)
  • 1/2 cup (90 grams) uncooked quinoa
  • 45 grams (1/2 cup) roughly chopped almonds
  • 2 tablespoons sunflower seeds
  • a pinch of salt
  • 65 grams (1/4 cup) creamy peanut butter
  • 4 tablespoons honey, or agave or maple syrup
  • 50 grams (1.7 ounces) dark chocolate chunks or chips
Instructions
  1. Preheat the oven to 170 degrees C (340 degrees F). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, stir together the oats, quinoa, almonds, sunflower seeds, and salt.
  3. In a microwave safe bowl, add the peanut butter and honey. Microwave for 15 to 30 seconds, until the peanut butter and honey have melted.
  4. Immediately pour over the dry ingredients and stir to combine until the oats, nuts and quinoa are evenly coated.
  5. Spread the mixture onto the prepared baking sheet and bake for 20 minutes or until golden brown, stirring halfway through.
  6. Remove from the oven and let it cool on the baking sheet. Once completely cool, stir in the dark chocolate chunks or chips.
  7. Store the crunchy peanut butter quinoa granola in an airtight container for 2 weeks, or in the freezer for up to 1 month.
  8. Enjoy!
