This salad is simple and delicious and has a perfect combination of savory and sweet.  Serve it for lunch or omit the chicken and serve it as a side salad along your favorite grilled dishes.

Strawberries are marinated in a balsamic vinaigrette that doubles as a dressing for the salad. Feel free to substitute the strawberries with other fruits. Blueberries, raspberries, watermelon, peaches, cantaloupe… they would all be great options!

Sweet and spicy candied pecans add a nice crunch to the salad and they are so easy to make. Toss the pecans with maple syrup, cayenne pepper, and salt. Spread the pecans on a lined baking sheet in a single layer and bake until golden brown.

I personally love feta cheese, but another great combo with this salad is blue cheese or goat cheese. Use any greens you have on hand: mixed greens, romaine hearts, arugula, or kale. The best part of this salad is that it’s totally customizable!

You can cook the chicken ahead of time, let it cool, then refrigerate it in an airtight container for up to 1 day. Candied pecans can be made up to a week ahead of time and stored in the refrigerator or a dark pantry.

  • For the strawberries:
  • 1 1/2 tablespoon extra-virgin olive oil
  • 1 1/2 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon chopped fresh thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 245 grams (1 1/2 cup) sliced strawberries
  • For the maple pecans:
  • 30 grams (1/3 cup) pecans
  • 1 tablespoon maple syrup
  • a generous pinch of cayenne pepper
  • a pinch of salt
  • For the chicken:
  • 1/2 tablespoon olive oil
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 skinless, boneless chicken breast
  • cooking spray
  • Other ingredients:
  • 120 grams (4 cups) fresh baby spinach
  • 1/2 small red onion thinly sliced
  • 28 grams (1/4 cup) reduced-fat crumbled feta cheese
Instructions
  1. Strawberries:
  2. In a medium bowl, whisk together the oil, balsamic vinegar, honey, thyme, pepper, and salt. Add the strawberries, toss to coat and set aside.
  3. Pecans:
  4. Toss the pecans with maple syrup, cayenne pepper, and salt. Spread the nuts on a lined baking sheet in a single layer and bake at 200 degrees C (400 degrees F) for 15 minutes or until toasted and golden brown. Remove from the oven and set aside to cool.
  5. Chicken:
  6. Heat a medium skillet over medium-high heat. Brush the chicken breast with olive oil, and sprinkle with salt, pepper, and paprika.
  7. Coat the pan with cooking spray, add the chicken to the pan, and cook until no longer pink on the inside and nicely browned on the outside. Let it rest for 5 minutes then cut the chicken into slices.
  8. Assemble the balsamic strawberries chicken salad:
  9. Divide the baby spinach between 2 plates, top with the sliced chicken, strawberries, balsamic mixture, and onions, sprinkle with feta cheese and pecans and serve.
  10. Enjoy!
